A lesser-known relative to the black chia seed, white chia seeds are high in Omega 3 and 6 essential fatty acids in a ratio of 3:1. Antioxidant-rich, they contain complete protein and more calcium than milk and are an excellent source of dietary fibre. Organic white chia seeds are nutritionally identical to the black variety. The reason white organic chia is sometimes preferred is purely for visual reasons, black chia may not always look aesthetically appetising in certain meals. When added to water, much like flax seeds (linseeds), chia swells and surrounds itself with a soft, flavourless gel. This makes it suitable for adding to juices and smoothies as they are less likely to sink to the bottom. As well as in drinks, chia seeds can be added straight to cereals, yoghurts, salads, and even bread dough.
