FESTIVE NUT ROAST (Gluten-free)

INGREDIENTS
-1 Suma Nut Roast mix savoury vegan (Gluten-free)
-1tablespoon , extra virgin , olive oil- 1 onion , finely chopped
– 1/2 tsp. dried rosemary
– 1/2 tsp. Dried thyme
– 2 garlic clothes minced
– 100 grams cooked chestnuts, roughly chopped
– 1 tbsp. Tomato pureé
– 2 sheets of ready roll puff pastry
– Salt & pepper to taste
– Milk or plant milk to brush over pastry
METHOD
1.Preheat the oven to 200° C / 180C fan oven and line a baking sheet with parchment paper.

2. Put the olive oil in a frying pan and gently fry the chopped onion, garlic and herbs. Add in the tomato puree, stir well and set aside to cool.
3. Empty the packet of Nut roast mix into a large bowl. Stir in 250 milk of water and leave to sit for 20 minutes until all the water has been absorbed. Then stir in the onion and herbs and the roughly chopped chestnuts. Season to taste
4. Unroll one of the puff pastry sheet sheets onto a floured surface, laying it horizontally in front of you.
5. Spoon your roast nut roast mixture along the centre of the pastry sheet. Then fold in the ends first and then the sides, sealing with milk and a pastry brush. Turn the pastry parcel over carefully and lay it on the lined up baking sheet, joined edged down.
6. Unroll the other pastry sheet and use to cut out your decorations. Try some stars! Stick the decorations to The Nut roast with milk. Then paint over the whole pastry parcel to glaze it.
7. Bake in the centre of the oven for thirty to forty minutes or until the pastry is nice and golden.
You can make your nut roast ahead of time and then freeze it before baking. Then when you are ready to use it, you can bake it straight from the freezer. You will probably have to be to extend the baking time slightly.
