FESTIVE NUT ROAST (Gluten-free)

Prep 30 minutesCook 30 to 40 minutesServes 4-6 INGREDIENTS -1 Suma Nut Roast mix savoury vegan (Gluten-free)-1tablespoon , extra virgin , olive oil- 1 onion , finely chopped– 1/2 tsp. dried rosemary– 1/2 tsp. Dried thyme– 2 garlic clothes minced– 100 grams cooked chestnuts, roughly chopped– 1 tbsp. Tomato pureé – 2 sheets of ready roll puff pastry – Salt & pepper to taste – Milk or plant milk to brush over pastry METHOD 1.Preheat the oven to 200° C / 180C fan oven and line a baking sheet with parchment paper. 2. PREP: 20 minutesCOOKING TIME: 40 minutesSERVES: 5-6 INGREDIENTS60g Blanched Almonds60g Hazelnuts60g Almonds60g Pistachio60g Pine Nuts100g Suma vegan Sausage Mix (See gluten-free alternative recipe)1 Onion, finely ChoppedCoconut Oil for frying2 Garlic Cloves – finely fhopped1/2 tsp Dried Mixed HerbsPinch of Pepper3 tbsp Tomato Purée4 Slices of Bread / 100g of fresh Bread Crumbs100g Chestnuts100g Cranberries1 tbsp Flat Leaf Parsley1 tbsp Vegetable BouillonReady-rolled puff pastry1 Egg beaten for the glazing (can use milk) METHOD 1.
