Our hearty winter soup recipe

Serves 4 to 6


*1 tablespoon coconut oil
1 medium onion finely chopped
1 leek finely sliced
4 carrots
2 small to medium sweet potatoes cut into small chunks
*½ cup red lentils
*½ cup barley
*2 Kallo vegetable stock cubes
2 pints of hot water
1 teaspoon ground cumin
1 teaspoon dried thyme or 3 to 4 fresh sprigs
*Black pepper and Himalayan Pink Rose Salt

Fry the onion and leek in coconut oil until soft, add the cumin, thyme, carrots and sweet potatoes and fry for a minute or two.

Add the water and stock cubes, lentils, barley and black pepper. Bring to the boil then reduce the heat and let cook for 30 minutes. Season to taste and serve.
